The Brew-Magic V350MS is the most popular pilot worldwide. It’s in more pubs, tasting rooms and large brewer laboratories than any other system on the planet. The Brew-Magic RIMS methodology followed 4 prototypes and 5 years of research by a team of brewing scientists and Master-brewers.

Those attempting to re-create the recirculation environment achieved by Brew-Magic are most always disappointed. The simple placement of a low wattage heat exchanger in a revolving wort flow is only the beginning of the complicated nature of RIMS (recirculating infusion mash system). Flow ratios, kettle design, wort return patterns, applied heat, and more, are all factors which are necessary to achieve a variable free, brewing system.

The team in 1990 included Dr. George Fix (Principles of Brewing Science) worked to design-away those brewing characteristics determined to be less than repeatable. Procedural as well as mechanical aspects of beer production were each considered. Typical inconsistencies included wort handling technique, temperature control, stratification issues  (heat layering), hot- side aeration, caramelizing, stirring effects and brewer recipe recall.  The Brew-Magic System employs specific RIMS techniques which are modified to limit inconsistent, and less than repeatable brewer activities.

Process Flow Control

  • Milled grain is held in saturated equilibrium.
  • Wort moves smoothly past any heated surface without aeration
  • Both fuel gas along with electronic heat are applied to achieve exacting target acquisition and maintenance
  • Recirculating wort gently but fully spends the grain without stirring it
  • Kettles are specific for the RIMS process. Stratification of heat is virtually eliminated.
  • Caramelizing/scorching effects are non-existent.
  • Touch screen controller monitor all functions & prompts brewer with recipe file information, time-clock prompting, and temperature.
  • The undisturbed grain bed becomes a static filter to clarify wort continuously
  • Variable free precision frees up the brewer’s time dramatically to be productive in other ways.

Temperature Control

  • Wort temperature is precisely tuned by a sophisticated color, touch screen controller

The Brew-Magic V350MS System provides:

  • One tenth ( 1/10 ) degree temperature control accuracy. Gas Fired burners plus built-in electronic heat exchanger. Use the burner to assist in getting near the desired target temp., then the controller will take over to tune the temperature precisely.

History

Here’s a few of the many things that make repeatability so difficult:

  • Less than repeatable brewer methodology
  • Stirring effects and inconsistent brewer technique

Back in the early nineties, several complex brewing issues made small batch production less than reliable.

Pubs and Micros which were appearing around the country were busy attempting to develop recipes that could help them ‘stake a claim’ in the newly forming craft brewing business. Brewers have always been interested in using less expensive, small scale systems for recipe experimentation purposes. Obviously a 10-15 gallon experiment is far less costly than a 500 gallon version of the same thing.

Cost savings like this certainly permits more freedom to try alternate ideas to finely tune recipes to perfection. The use of large brewing systems for such purposes typically resulted in the discarding of huge quantities of undesirable product as well as a huge monetary loss in the process. The search for a truly repeatable small batch pilot brewing system was underway.

At the same time and in similar fashion, home brewers were arming themselves with stove pots and plastic coolers in an attempt to re-create last year’s favorite holiday brew. In spite of a well written recipe however, brewing an exact duplicate of the original beer was highly improbable. Home-brewers simply could not make the same product twice in a row!

‘Small-Batch’ brewing with ‘small batch’ repeatability was not to be found.
